How Much Does Cheese Cost in the US?
Short answer: on October 19, 2026, an 8 oz block of sharp cheddar cost $1.89 at Target (Good & Gather) and $2.98 at H-E-B for a Kraft block, with H-E-B's Hill Country Fare cheddar, 8 oz, listed at $1.87 with the package form not specified. All checked on retailer online listings.
Cheese is one of the few grocery categories getting cheaper: the BLS cheese index fell 3.0% year over year in September 2026. Block cheese from store brands is where the value sits, and this week's prices show why.
The prices we verified
Target, Good & Gather sharp cheddar block, 8 oz: $1.89 (its medium cheddar block is the same price). H-E-B, Kraft sharp cheddar block, 8 oz: $2.98. The $1.09 gap between a store brand block and a national brand block is the brand premium in its purest form.
A third-party in-store price check by FinanceBuzz in mid-October 2026 found Aldi's Happy Farms sharp cheddar block, 8 oz, at $1.95, right in line with Target's store brand. Albertsons and Safeway advertised Tillamook cheese, 5 to 8 oz packages, at $1.99 for October 14 to 20, 2026, a name brand at the store brand price point.
What is a good deal on cheese?
Our guidance: at or below $2 for an 8 oz block is a good price, and at or below $1.75 is a stock-up price. Blocks keep for weeks unopened and freeze acceptably for cooking, so a sale is worth two or three blocks if your household cooks with cheese.
Shredded and sliced cheese typically runs 20% to 40% more per ounce than the same cheese in a block. You are paying for the shredding. For cooking, the block wins almost every time; for sandwiches, slices earn their premium honestly.
Why cheese prices move
Cheese follows milk with a lag, through the dairy market. The BLS dairy index fell 0.7% year over year in September 2026, cheese fell 3.0%, and the USDA forecasts dairy prices up just 0.1% across 2026, which adds up to a calm category where competition, not costs, sets the shelf price.
That is why the spread is mostly brand and format: the same week, the same size, a $1.89 block and a $2.98 block. In a falling-cost category, the store brand captures the decline first.
How to pay less for cheese
Default to the store brand block and grate it yourself for cooking. In our October 19 check that habit was worth about $1.09 per 8 oz against the national brand block.
Buy name brand cheese only on its ad weeks: Tillamook at $1.99 this week matched the store brand price, which is the pattern to wait for.
Check cheese against our weekly tracker. Cheese ads rotate by brand, so the cheapest good block changes stores often.
